Micorbial Qualaity of Raw and Grilling Kabab in some of Resturants at Kufa City / Iraq | ||

| Abstract | ||
| This study is carried out to investigate about microbiological contamination in some resutrants in kufa city /Al- najaf governorate at the period from 1/11/2010 over eight weeks total of 20 samples, the microbial tests include total plate count , total coliform, Staphylococcus aureus molds and yeasts as well as Salmonella test. The result of this study showed that TPC, TC, SA , M & Y were :9.4×107 CFU/g , 6.8×105 CFU/g and 27.2×105 CFU/g respectively, Salmonella test was positive in five samples from raw Kabab with percentage 50%. These results were compared with microbial limits related with Iraqi standard system and show that exceeded it. The results of this study showed that after grilling the kabab an open fire the TPC, TC and SA count were 9.1×103 CFU/g, 99 CFU/g and 41 CFU/g respectively, No growth was shown in some of samples of TC and SA However no growth of molds and yeasts was shown in all samples that results was similar to Iraqi standard system.
