| The stability of oils and fats show in Basrah city markets was studied by measuring some changes with storage. The acid value was (0.48 – 5.37) mg.KOHgm. Sample for Balady fat and Olive oil respectively. Peroxide value was (4-40) m.eq.peroxide oxygen 1 Kg sample for vita fat and olive oil Respectively, and the TBA value was (1.07-2.03) Malonaldehyde/1Kg. Sample for Balady fat and Mezan fat respectively, while the saponification number was (195.87-203.13) mg./gm | ||
