| This study was conducted to isolation and identification of Lactocoocus lactis subsp lactis from fermented dairy products samples, collected from five local in Salah Aladdin Governorate at Al-Dorr, Sammura ,Tikrit, Al-Alam, and Al-Hawi, to determine the ability of isolates on nisin production, and the ability on inhibition the bacterial testes such as E.coli, Salmonella enteritidis , Pseudomonas aeruginosa , Streptococcus fecalis and Staphylococcus aureus ,The results indicated that capable to isolation of 5 strains from Lc.lactis subsp lactis from locally samples and were appeared it capable to produce the nisin in different concentration. The best production isolates were selection which appear from Sammura(SM) and Dorr(DO), thats nisin production capable to inhibited Micrococcus luteus at zone diameters at 22.5 and 22.2 mm respectively. The two mutant isolate's symbolized (SMM) and (DOM) which produced after mutant used U.V lights to the (SM) and (DO) isolates were also appear to capable of inhibition the Micrococcus luteus at 24.4 and 23.7 mm respectively , The efficacy of nisin produced in inhibition effects against the bacterial testes such as E.coli, Salmonella enteritidis , Pseudomonas aeruginosa , Streptococcus fecalis and Staphylococcus aureus , were appears a good inhibiters and the zone diameter become at 25 mm with 10 mg of nisin/ ml , and the inhibition effects appear relative between positive and negative gram species of bacteria. |
