| This Study was conducted in graduate Laboratory of Food Science Department - College of Agriculture -Tikrit University , at period from 1July/2011 until the end of April 2012 in order to investigate the microbial species that contaminated the skin,gill and intestine and the types and concentration of biogenic amines after 10 days storage at 4°c for four types of Iraq fish as Shboot, Shilluk, Jery, Carp (Barbus grypus, Aspius vorax , Silurus triostegus , Cyprinus carpio).The results showed the bacterial total count and fungi in intestine were increasing Compared with gills and skin, and increased in spring season compared with Autumn. And the more bacterial species were from Enterobacteria ,Lactic acid bacteria, Staphylococcus and imperfect fungi species. The results showed also significant increasing in biogenic amine concentration and diversity in types as Histamine, Tyramine, Putrescine , Cadaverine and 2-Phenyl Ethyl Amine , while noted the Tryptamine was decreasing with the storage period increasing to 10 days at 4°c. |
