| This work was performed research to compare the chemical and physical properties of milk samples from four different types of animals, a cow, sheep, goats and camels.12 samples were collected milk from the city of Tikrit. The results emerged from that cow's milk contains 12.7% Total solids , 3.5% fat, 3.2% protein, 0.73% ash and 6.65 pH. The sheep's milk contains 19.3% total solid, 6.4% fat, 5.9% protein, 0.90% ash and 6.41 PH value Goat milk scored 13.8% total solids, 4.3% fat, 3.5% protein, 0.79% ash and 6.5 pH value. While camel milk contains 12.5% total solids, 4.1% fat, 2.8% protein, 0.79% ash and 6.44 pH value. It is noted that in all milk samples of various collected from the city of Tikrit, the results were the highest in the milk of sheep and goat milk from the milk of cows and camels As for the fatty acids in the fat of milk samples is observed from the results that the fatty acids short chain (C4-C12) in camel milk be worth very little compared with other milk samples, but concentration of fatty acids C14, C16 and C18 they are high compared with other milk samples. |
