Study Of Some Factors Affecting The Growth Of Lactic Acid Bacteria And Bacteriocin Production | ||

| Abstract | ||
| Two isolates of Lactobacillus plantarum (LBP), from pickled vegetables, and L. acidophilus (LBA), from breast-fed baby feces, were used for the study of some factors affecting the growth and bacteriocin production through the determination of their inhibitory activity against the growth of Lactobacillus-related bacteria, other test bacterial species and fungi using well diffusion method. The results revealed that the optimum pH of growth was 5-6 for both isolates and maximum bacteriocin production was at pH 5.5. Optimum growth temperature was 30 to 37C and for bacteriocin production was 30C. Incubation period of 48 hr gave the highest growth, while maximum bacteriocin production was at 18-24 hrs which means that bacteriocin production started at late logarithmic phase and continued through the early stationary phase. | ||
