| Abstract | ||
| Gliadins are heterogenous proteins of alcohol soluble wheat endosperm storage protein, whose composition varies among wheat genotypes. Polyacrylamide gel electrophoresis was used as a method to identify wheat varieties. Gliadins were extracted with 70% ethanol from nine local wheat cultivars, one of which belongs to T.durum , whereas the others belong to T.aestivum with different protein content .Differences were found among PAGE patterns of all investigated wheat cultivar. | ||
